How to make shrimp tikka masala

  1. In a small bowl, mix all dry spices except paprika and sugar for sauce. Leave that aside.
  2. Shrimp: Heat a large, heavy, deep skillet over medium heat. Add olive oil and heat until it shimmers but does not burn. Note. For a more traditional method, you can use the same amount of butter (refined) instead of olive oil, and olive oil is better for you. ;)
  3. Shrimp: Add the prepared shrimp to the hot skillet. Sprinkle with curry powder, salt and sugar if using. Cook until almost translucent, stirring constantly to prevent burning. About 1-2 minutes. You don't want them to be fully cooked, they will solidify in the sauce. Transfer the shrimp to a bowl of liquid from the pan and set aside. Note: There will be a curry stick in the pan. This sauce is good for the taste. :)
  4. Sauce: Keep skillet over medium heat. Add the olive oil to the sauce and heat until it shimmers but does not burn. Add the onion and sauté until soft, stirring often. After about two minutes, add the garlic and spice sauce. Saute until fragrant, stirring constantly so that the spices and garlic do not burn. Two more minutes.
  5. Sauce: Add tomato sauce. Stir everything to combine, scraping the bottom of the pan to melt and pick up any tasty bits that may have stuck to the base. The mixture is boiled. Reduce the heat and simmer, uncovered, until the sauce has reduced and thickened, stirring frequently. About 10-15 minutes.
  6. Sauce: When sauce thickens, add paprika, sugar and coconut milk. Mix well. Taste and adjust spicy, sweet and savory toppings to your liking. Cook for another 10 minutes, stirring almost constantly. Add shrimp, stir, reduce heat to medium-low (they should simmer), then cover and cook for 5 more minutes.
  7. Finish: Serve with fresh jasmine rice with delicious vegetable curries such as potato curry with peas and carrots. happy vacation!
  8. Note 1: If you want less spiciness, start with ½ teaspoon cayenne pepper seasoning mix. Since it is tender and medium spicy, we take a full teaspoon. If you want the dish to be very spicy, add another 1/2 teaspoon of chili and add spicy curry to the shrimp.
  9. Note 2: Canned coconut milk is thicker and richer than standard coconut milk; The consistency is slightly thicker than cream. The brand you bought comes in a small cardboard box in the health food section of your local grocery store. If you can't make coconut milk, you can use a can of regular unsweetened coconut milk, but you may need to boil it longer to thicken the sauce. By all means, always shake the coconut mill vigorously before use as it separates the jar/box into solids and liquids.

While this is certainly not an exhaustive guide to quick and easy meals, it is good food for thought. The hope is to get your creative juices flowing so you can make great family meals without having to go through incredibly heavy cooking.
