  13. 8 ounces pasta linguine - cooked according to package directions, 1/4 cup pasta water

Instructions for Shrimp Linguini with Coriander and Lime

  1. Thaw raw prawns, peeled (I bought frozen prawns, easy to peel, like the Aquastar brand). Place the cleaned shrimp in a medium bowl and the shells in a small saucepan.
  2. To make the stock, cover the shells in a saucepan with about 2 1/2 g of water. Pinch of garlic powder and onion powder, without salt, if desired. Bring to a boil over medium heat. Reduce to medium-low, cover and simmer for 25 minutes. While the marinated shrimp broth is cooking. Toss shrimp in a bowl with 2 tablespoons of olive oil. Increase the heat to medium and cook, stirring occasionally, until the liquid has reduced by half. About 5 minutes.
  6. When the sauce reduces, reduce the heat to medium, add the bay leaf and lime juice and honey. Stir until well blended. Stir in heavy cream until completely combined. Bring to a boil again, stirring constantly, until thickened. About 2 minutes. Add 1/4 cup pasta water and shrimp to the sauce. Cook until prawns are hot and sauce thickens again. 2 more minutes. If you like, add a pinch of salt and pepper. Mix.
  7. Turn off the fire. Add the linguine to the sauce in the saucepan. Remove the coat. Add about 1/3 cup chopped cilantro and freshly grated Parmesan, tossing gently again to coat. Taste again and add more salt and pepper to taste. Serve with a crunchy salad and enjoy.
  8. Note: You can use fatty chicken stock instead of shrimp stock. The taste of the shrimp will not really taste like in the cooking. However, the emphasis is on salt. If you use regular stock of sodium, it will become too salty when you reduce the amount.
