Steps to prepare fried rice with prawns, eggs and onions
- If you want to make fresh rice, prepare rice. If you use the rest, keep it in the refrigerator, as cold rice spoils easily.
- Frozen or fresh shrimp can be used. If frozen, thaw according to package directions. If fresh, peel and roll the prawns. I used it frozen, peeled and cooked here. I hate cleaning shrimp!
- Combine onion ingredients in a bowl.
- Mix well, cover, keep for 10 minutes.
- Cut the bell pepper into rings and chop the garlic
- Spray or grease a wok/deep frying pan/pan and keep it on high heat
- Add the shrimp in a single layer to the hot pan. Leave it alone for a minute.
- Turn each shrimp over. Leave it for another minute or until smooth.
- At this point, remove the bowl/plate to clean.
- Heat the pan again, add the pepper and cook for 1 minute, add the garlic and cook for about 30 seconds, then transfer to a plate/bowl.
- Reduce heat to medium. Add eggs, salt and pepper. Let the eggs move.
- Before cooking the eggs, add the frozen peas. Let everything move.
- At this time, a little oil or butter will add more flavor and water the rice if desired. 1-2 tablespoons is fine or leave it as is. I left it as is but my wife said it needs oil.
- Add rice (two cups shown on the right).
- Stir until the rice is well mixed and heated through. At this point I like to turn the heat down to medium, it takes a few more minutes but it seems to limit a little burning here and there.
- Add the prunes, pepper and garlic again.
- Mix well and heat for about 3 minutes. I also put another ground black pepper.
- be present You can garnish with chopped chives, cilantro or parsley (I left out, but I liked the chives).
