  1. Discard shrimp and remove shells. Place both on a plate lined with paper towels in the refrigerator to dry for 30 minutes before baking.
  2. Add good quality olive oil to a medium saucepan over medium heat. Add the shrimp shells and sauté in the oil for 10 minutes. Use a wooden spoon to extract all the beneficial properties. Remove the casing and discard it.

Sprinkle with couscous and stir quickly. Remove the pan from the heat and cover with a lid. leave it for 5 minutes
  6. Remove the lid and turn the pan on. Serve with a sprinkle of cilantro (a clairvoyant might notice I used parsley, that's all I have and it works).
